In the case of this drink, which features Aperol, the most subtle of aperitifs, less is more. Increasing the quantity of sparkling wine would make it excessively alcoholic. Hence, it incorporates seltzer to maintain a refreshing and effervescent quality without unduly altering the flavour profile.
